There are two main processes invovled in keeping knives sharp: occasional honing and regular sharpening. Steels are used to smooth blades after honing and to maintain a sharpened edge.
Stones, grinders and honing machines are used on dull blades to restore sharpness, they do however contribute to blade wear much more quickly than steels.
