Chicken Fajita Marinades

Basic Marinade

Juice of 4 limes
3 tablesppons olive oil
1 teaspoon dried oregano
1 teaspoon dried corriander powder
1 clove garlic crushed an puréed (optional)

Marinade 2

1/3 Cup Beer
1/3 Cup Lime juice
1 teaspoon Olive or canola oil
2 large garlic cloves, crushed
1 teaspoon Brown sugar
1 teaspoon Worcestershire sauce
1 teaspoon Minced fresh cilantro
1/2 teaspoon Ground cumin
Salt to taste

Combine all ingredients and mix well. Pour marinade over chicken in shallow glass, plastic or other non-reactive container

Refrigerate for 1 to 3 hours. If you marinade much longer the chicken tends to go a bit powdery when cooked

Makes enough for 4 portions.
